Random recipe recommendation:

Take a chicken breast, half a mango, a big red potato, and half a can of coconut milk.

Cut up the mango (take off the peel), cut the chicken into strips, and thinly slice the potato (I kept the peel, I like it, but your call).

Put the coconut milk and the mango into a pan and bring it up to simmering. Add the chicken and potato, put on medium heat, and cover. Cook for, I don't know, twenty minutes/half an hour. Till the potato is cooked through, the chicken can be cut without a knife, and the coconut milk is about gone.

Then eat it up and be proud of yourself for having healthy food that doesn't taste like it. ♥

Yup! But for some reason they make "lite" coconut milk. *shudder* I'll take the fat, thanks. I think the nutritional value of the rest of the ingredients balances it out nicely, but then I eat one real meal a day and graze for the rest so I guess I can afford to be generous about fat. I've never been too bothered about in the first place, anyway. *g*

Mmm, mango chicken in any permutation is delish! I'm going to give that a shot!

You know, you could add some curry powder and cooked basmati rice and it would be pretty much an authentic Indian dish. Do they have any Indian groceries in your neck of the woods?

Make sure it's meant for chicken if you can! If the manufacturer gives a damn they'll say it is. Some curry blends go better than others; trust me, I found out the hard way.

The hardest part is slicing everything. And dude, if you only have the one cutting board, do the chicken last. I mean, yeah, you're cooking the shit out of everything anyway, but still. Ew.
